What can I make with almond flour?

My daughter-in-law gave me some almond flour and I'm not sure what to do with it. Do you  have any good recipe suggestions I could try?

There are a number of things you can make with Almond Flour including Irish Soda Bread, Bran Muffins, Paleo Pumpkin Bread, Paleo Browines, Paleo Chocolate Chip Cookies, and Silver Dollar Pancakes. [1]

My personal favorite Almond Flour dish are Almond Flour Waffles. Here is a recipe [2]:

What you need-

- 1 cup of almond flour

- 4 eggs

- 1 teaspoon of baking soda

- 1 pinch of salt

- 1/4 cup of honey

- 1 teaspoon of Vanilla extract

- cooking spray

Turn on your waffle iron. Combine the almond flour, baking soda, and salt into a large bowl. In a different bowl, combine and whisk the eggs, vanilla, and honey. Now, pour the flour mixture into the bowl with the eggs. Use the cooking spray to grease the waffle iron. All that is left is pouring the battle onto the iron and cooking the waffles until they are brown! [2]

There are so many great recipes you can make with almond flour! I personally love Zucchini Bread; this recipe (http://elanaspantry.com/paleo-chocolate-zucchini-bread/) calls for almond flour, cacao powder, sea salt, baking soda, eggs, coconut oil, honey, vanilla stevia and, of course, grated zucchini.

These Silver Dollar Pancakes also look amazing: http://elanaspantry.com/silver-dollar-pancakes/. The ingredients are pretty simple; the recipe calls for eggs, water, vanilla extract, honey, almond flour, sea salt, baking soda, and coconut oil. In fact, several of the ingredients overlap with the Zucchini Bread recipe, which makes it easy to cook them both!

Finally, give this Almond Flour Blueberry Muffin recipe a try: http://www.sheknows.com/food-and-recipes/articles/3520/cooking-with-almond-flour/page:3. You can use either fresh or frozen berries, and consider adding in a dash of cinnamon for a little extra kick.
