Even though I have a family, I often find myself cooking for one when my husband works late and my babies just want a good old peanut butter and jelly sandwich. Luckily, there are a a lot of great recipes out there! Here are a few that I've found:
1. Two Minute Shrimp Scampi Meal
With just six ingredients, you can whip up this meal in a skillet in no time. Simply toss shrimp with spinach leaves, olive oil, garlic, basil and a little hot sauce. Add it to a skillet and wait for the shrimp to turn pink. Voila!
2. Spicy Korean Pork Lettuce Wraps
This meal makes enough for four, but you can just freeze the extra to have easy meals for the future. It's a little more complicated than the shrimp, but it looks well worth it; you'll need boneless pork chops, Korean hot pepper paste, a pear, an apple, onion, ginger, soy sauce, sesame oil, honey, black pepper, jasmine rice, green onion, and lettuce.
