Cilantro salad is very delicious, and I happen to have a family recipe passed down from my mom who was given the recipe by a friend a long time ago. Not only is cilantro salad delicious, but it is a very healthy treat, incorporating ingredients like apple cider vinegar and plenty of fresh veggies. You can enjoy this salad on its own by the spoonful, or you can choose to make nachos with tortilla chips, use it on crackers or enjoy it as a treat however you like. Some optional ingredients are guacamole and sour cream; however, they need to be added as toppings instead of mixed in the salad because the apple cider vinegar will break down these two ingredients.
Let's get to the ingredients: You're going to need tomatoes, and my mother's recipe calls for 7 diced roma tomatoes. You also need to chop up one bunch each of both cilantro and green onions. Grab a raw jalapeno from the produce section as well because the cilantro isn't the only ingredient giving this dish its spice. After dicing the jalapeno, you're going to chop up a cup of banana peppers. In a large mixing bowl, add these ingredients together with 1 bags of broccoli slaw mix.
Now for the dressing! Juice 2 lemons into the bowl, and pour in a half cup of apple cider vinegar. Sprinkle 1 teaspoon of salt, a half teaspoon of black pepper and three tablespoons of sugar. Once you've added these ingredients to make the dressing, mix everything together thoroughly. This unique, refreshing, and zesty snack will help you keep your new year's resolution to maintain a healthier diet.
